If the bike isnt used for a couple of weeks, the carburettor fills up with two stroke oil...Ive had the carb out and cleaned it but its still doing it so Im obviously missing something. Any help would be appreciated, Thanks SB

that is most likely caused by a stuck oil check valve.
it needs to be removed and you have to spray a carb cleaner
in to it or get a syringe and a bit of hose that will fit the oil line
and syringe tip. fill it with cleaner and force it through the valve
to free up the spring and tiny ball bearing that closes the 'valve' passage
do not try to clean the valve without removing it as the cleaner will strip
off all the oil and your motor might seize up when you fire it back up..
the other fix is to close off the oil line ;cap the valve and premix your fuel
which is a pia.
on one cheap chinese scooter i've seen a whole oil reservoir leak into the motor ; out the exhaust port, into and filling the exhaust pipe almost to the muffler....
so its a good idea to fix it now ..
